Gr\u00e2ce \u00e0 nous, son pain d\u00e9veloppe des ar\u00f4mes forts et divers, il gonfle juste ce qu&rsquo;il faut et se conserve plusieurs jours. <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le pain est peu p\u00e9trie<\/li>\n\n\n\n<li>Utilisation de 1% de levain<\/li>\n\n\n\n<li>Four chauff\u00e9 au bois<\/li>\n\n\n\n<li>Fermentation longue 12 \u00e0 20h selon la saison<\/li>\n<\/ul>\n\n\n\n<p>Pour tout cela, J\u00e9r\u00f4me nous laisse le temps de fermenter, de nous multiplier.
